Tots hold, which is why they travel
A tater tot has a much lower surface-area-to-volume ratio than a shoestring fry, so it sheds heat and crisp far more slowly. That is why tots survive a delivery bag and a thin fry does not. If a meaningful share of your orders leaves the building, tots are worth putting on the menu purely as the side that arrives intact.
Griddle or fryer
Shredded hash browns made to order on a griddle taste better and cost less per portion, but they cost labour and griddle space during the one hour when both are scarcest. Frozen patties cost more per portion and take zero skill to execute consistently. Most diners we supply run patties on weekdays and shredded at weekend brunch, which is a reasonable compromise.

Common questions
Do tots hold better than fries for delivery?
Yes, noticeably. Their shape sheds heat and moisture more slowly than a thin fry, so they arrive closer to how they left the kitchen. Vented packaging still matters.
Shredded hash browns or frozen patties?
Shredded tastes better and costs less per portion but needs griddle space and a cook. Patties are consistent and fast. Many diners run patties on weekdays and shredded at weekend brunch.
Can I get seasoned tots?
Yes, seasoned and classic, in standard and mini. We will bring both so you can taste them against your current item.
